STEP-BY-STEP COOKING RECIPE
Cut each chicken deeply across the breast with a kitchen knife set and flatten it like a tobacco chicken, preserving the wings behind its back.
Mix olive oil with crushed garlic and lemon juice. Marinate the chicken pieces in this mixture and refrigerate for 2 to 4 hours.
Remove the chicken from the marinade and carefully remove the remaining skin. Place a lemon wedge and 4 fresh basil leaves on both sides under the skin of each breast. If necessary, secure the skin with wooden skewers. salt and pepper.
